How to Brew with a Phin Filter

A simple, meditative guide to mastering the art of traditional Vietnamese coffee.

Welcome to the phin ritual. This simple, elegant brewer is the secret to unlocking the deep, rich flavors of Vietnamese coffee. There are no paper filters, just pure, concentrated coffee with a signature crema. This guide will walk you through the four simple steps to a perfect cup.

What You'll Need

  • Phin Filter
  • 18-22g of VitaBrewX Coffee (medium-fine grind)
  • 250g Hot Water (just off the boil)
  • Your Favorite Mug
  • Optional: Sweetened Condensed Milk & Ice

The Four Simple Steps

  • 1.Prepare the Filter

Place the phin filter chamber directly on top of your mug. Add 18-22 grams (about 2 heaping tablespoons) of coffee to the chamber and give it a gentle shake to level the grounds. 

  • 2.Place the Press & Bloom

Gently place the gravity press on top of the grounds (do not tamp it down hard). Pour about 30g of hot water evenly over the press to allow the coffee to "bloom." Wait 30 seconds as the grounds expand and release their aroma. 

  • 3.The Main Pour

 Slowly fill the chamber to the top with the remaining hot water. Place the cap on top to retain heat, and watch it drip. The full brew should take between 3 and 5 minutes.

  • 4.Enjoy Your Ritual

Once the dripping stops, carefully remove the phin. Enjoy your coffee black or add a spoonful of sweetened condensed milk for the classic cà phê sữa. For an iced coffee, simply brew directly over a glass of ice. 

Dialing In Your Brew

  • Brewing too fast? Your grind is likely too coarse. Try a slightly finer grind next time.
  • Brewing too slow (or stalled)? Your grind is too fine, or you tamped the press down too hard. Try a coarser grind and a lighter touch.
